Food industry gases improve product shelf life and food safety

Food is often packaged by replacing the air in the package with a suitable gas mixture. This method slows down spoilage and extends the shelf life of the product.

The most commonly used food industry gases are:

Carbon dioxide (CO₂) – slows microbial growth
Nitrogen (N₂) – prevents oxidation and keeps the packing in shape
Oxygen (O₂) – used, for example, to preserve the red colour of meat

Due to the varying composition of foodstuffs – for example, fat content, moisture level or microbiological sensitivity – the suitability of each gas mixture is tested in advance by means of preservation tests before use.
